The secret of this good pecorino cheese is in its careful process of preparation and refining. The selection begins by choosing the milk of the best herds of sheep of the Churra and Castellana breed, and obtaining a cheese with its own personality and exquisite flavor, that every good gourmet knows how to appreciate. The seal of Tierra de Sabor, has been granted to POK as a hallmark of excellence through the Ministry of Agriculture and Livestock of the Junta de Castilla y León.
It has a maturity of 12 months approx. It is made by Quesos García Baquero, a company located in Alcazar de San Juan, a town located in the heart of the heart of La Mancha. This company is one of the best known nationally and internationally and has been manufacturing cheeses in an artisanal and industrial way since 1962, Villacenteno being one of the several brands that the group owns.
